We've looked at frontmatter and the Preface and now, for the first time to mind, we catch sight of Mr. Ukers' personality and position in the coffee industry as advocate, educator, spokesperson, and public relations flack. Whereas the preface was more or less just the facts--I wrote a book and this is how I did it and this is who helped me--in the foreword we not only get Mr. Ukers' full throated voice and his style on display, but the very first word signals the scope of the work: "Civilization.'
