About This Coffee

Eight years ago, Silvestre Justiniano Velásquez Morales planted his first coffee trees to see whether coffee could thrive on his land. What began as a small experiment has grown into Rancho Las Vegas, a thriving 1.32-hectare farm at 2,000 metres above sea level. Supported by his family and driven by a passion for continuous improvement, Silvestre cultivates Catimor, Bourbon and Caturra, refining his farming practices with each harvest to produce coffees that reflect both the potential of his land and his commitment to quality.

The Region

Nestled in the mountains of Tectitán, Huehuetenango, Ixconolí is a small community where coffee is closely connected to both the landscape and local traditions. Home to Tektiteko-speaking families, the region is known for its fertile clay loam soils, native forests and mountainous terrain, creating ideal conditions for specialty coffee production. Through resilience and a commitment to continuous improvement, producers in the region continue to build on Huehuetenango’s reputation for producing exceptional coffees with a true sense of origin.

Huehuetenango is both a large department (or state) and the eponymous capital city of that same department. While coffee isn’t grown in the city of Huehuetenango, it is abundant in the high altitude mountains to the west and north of the city. Producers are predominantly smallholders with around 1 hectare of land. In order to buy coffee directly from these smallholder groups we have installed a number or regional micro-warehouses and buying stations. This has both enabled us to receive coffee directly from the small holders and cut the transport & logistics costs for them; all while providing stable market access for these remote communities.

 

The Process

Every harvest at Rancho Las Vegas begins with the careful selection of ripe cherries, which are hand-picked and manually depulped before undergoing approximately 48 hours of fermentation. The coffee is then gently washed and dried on concrete patios for two to three days, depending on weather conditions. Throughout the process, each lot is closely monitored to ensure consistent drying and preserve cup quality. Combining traditional washed processing with attentive farm management, the result is a clean and balanced coffee that highlights the character of Huehuetenango’s high-altitude terroir.
