About This Coffee

In the lush highlands of Villa Corzo, a unique group of farmers is quietly shaping the future of coffee. These are the women of Villa Corzo—smallholder farmers who work with pride and resilience to cultivate some of the finest coffee in Chiapas. Known as the Delas, these women manage their own plots, often alongside husbands, children, and extended families. They embody a powerful tradition of empowerment through coffee farming, where every step of the process—from planting and harvesting to processing and drying—is done by hand. It’s a craft passed down through generations, but also a transformative force for economic independence and community change. 

Café Delas was created to help women farmers access the resources, knowledge and voice they need to grow their operations to the fullest potential. Every Café Delas coffee is sourced 100% from women farmers and for every sale, a portion of the profit is reinvested in programs that promote gender equality and empower women in the field.

The Region

Villa Corzo is nestled in the southern foothills of Chiapas, where the rugged terrain and fertile soils make it ideal for coffee cultivation. Here, the land speaks of both challenge and opportunity—steep slopes, abundant rainfall, and rich volcanic soils that nurture coffee plants at elevations ranging from 1,100 to 1,400 meters. This region benefits from the unique microclimates of the region’s cloud forests, where mornings are cool and afternoons are bright, ensuring slow, steady cherry maturation. The women of Villa Corzo have harnessed these conditions to produce coffee that is balanced and complex—vibrant acidity, notes of tropical fruit, brown sugar sweetness, and a smooth, silky body. It’s coffee that honors its land and its people with every sip.

The Process

The Villa Corzo Delas coffee is fully washed, reflecting the meticulous care these women take in every step of the process. After the hand-harvested cherries are delivered to their homes, they are depulped using small, manual pulpers—sometimes even by hand. The fermentation process is done in cement or wooden tanks for 24 to 36 hours, during which the women carefully monitor the process, relying on their sense of touch, smell, and experience. Once the mucilage has broken down, the parchment is washed thoroughly, then spread to dry under the warm sun on rooftops, patios, or raised beds for 8 to 10 days. The drying process is closely watched, as any variation can affect the final quality. This careful, hands-on approach ensures a washed coffee that’s clean, vibrant, and full of character.
