The Region
Pueblo Nuevo Viña is a small town in the northern region of the department of Santa Rosa. The area is not known for production of specialty coffee, making the efforts at Santa Isabel unique. The region is home to the Tecuamburro volcano. Formed 38,000 years ago, Tecuamburro is a conical volcano made up of many layers hardened lava and tephra. On the southern sloop of the volcano you’ll find Laguna de Ixpaco a rare sulfur pond. Because this is a volcanic region, there is great variety in altitude and, of course, the soil is rich with minerals Agriculture and some livestock are the main economic activities. In addition to coffee, crops include sugarcane, corn, potato, beans, and rice. In one opportunity they lose control of the fire and the cross end up burned hence the name stuck.
The Process
Robusta is not as popular as Arabica in Guatemala, representing just 2% of production. But this might slowly change as the 10 ha that Alex has set aside for Robusta at Santa Isabel has succeeded in producing a naturally sweet, fruit-forward cup. The secret to this wonderful cup is to use the “yellow honey” method for processing the Robusta. Though not new, honey processing is still rare. Cherries are depulped, but dried without washing, so some fruit remains. Unlike natural processing, most of the cherry is removed, but some sticky, honey-like mucilage remains, which is where the process gets its name.
