The Region
Baja Verapaz lies in Guatemala’s central highlands, where elevations stretch from 1,200 to 1,600 m.a.s.l. The region’s microclimate is unique—cool, misty mornings, filtered sunlight, and consistent rain fed by nearby cloud forests. The limestone-rich soil adds to the distinctiveness, giving coffees from this region a particular clarity and mineral-driven sweetness. Farming here is small-scale and often generational, with plots carved into steep slopes and surrounded by native forest. While not as widely known as Huehuetenango or Antigua, Baja Verapaz delivers a cup that’s just as compelling: layered florals, citrus brightness, soft stone fruit, and a clean, refined structure.


The Process
Coffee in Baja Verapaz is processed in the traditional washed method, with care that matches the region’s quiet precision. Harvesting is selective and done by hand, often by family members working their own land. After picking, cherries are depulped the same day and fermented in tanks or basins for 24 to 36 hours. Fermentation is monitored not by instruments, but by generations of experience—knowing the right moment by scent, touch, and feel. After thorough washing, parchment is dried on patios or raised beds for 10 to 14 days, turned regularly to ensure evenness in moisture and flavor development.
This is a region where quality is rooted in restraint. There’s nothing rushed about Baja Verapaz—its coffees unfold slowly in the cup, revealing nuance and structure with every sip. A quiet standout in Guatemala’s diverse coffee landscape.
