About This Coffee

Grown on the western slopes of Colombia’s Andean Cordillera, this lot comes from Jairo López Agudelo’s family farm in Sardineros, Quindío a department that, despite being Colombia’s smallest, helped establish the country’s reputation for standout coffees. Sitting around 1,450 masl, the farm focuses on quality-first production from a single estate, with Castillo as the primary varietal and harvests typically running March–May and September–November.

The Process

This extended fermentation natural process is built for intensity and clarity. Cherries are hand-selected and floated to remove defects, then fermented in sealed tanks under low-oxygen conditions. As fermentation progresses, yeasts convert sugars into small amounts of ethanol and release CO₂; with the tank closed, that CO₂ accumulates and helps keep oxygen levels low, shaping a controlled, aromatic fermentation before drying.

Drying is deliberately slow: the coffee is finished on parabolic beds to manage airflow and stability, with an average 25–30 day drying window. The result is a carefully controlled natural that’s designed to deliver a fruit-forward, aromatic profile while maintaining clean structure.

History of Coffee in Colombia

As with many coffee origins, it is believed that coffee was first brought to Colombia by priests, arriving, perhaps, within a decade or two after coffee first came to the Americas via the Caribbean in the first half of the 17th century. It was likely a garden crop grown for local consumption and barter for decades. Unlike other coffee regions, we have the story of a priest named Francisco Romero, who could be called the father of commercial coffee cultivation in Colombia. The folkloric tale goes that in the early 1800’s, Father Francisco, hearing confessions in the north eastern town of Salazar de la Palmas, assigned planting coffee to his parishioners as penance for their sins. The Archbishop of Colombia heard about this and ordered all priests to adopt the practice. Commercial production of coffee expanded quickly, moving into regions where the growing conditions were ideal.
